October Magic: Halloween Fun & Peanut Sauce Roasted Sweet Potatoes
October has always been my favorite month.
There’s just something about it—the cooler evenings, the changing colors, cozy meals, pumpkins everywhere, and that little bit of magic that comes with Halloween. And if I had to choose a favorite holiday, Halloween wins every time.
I love that Halloween can be playful, nostalgic, creative, and centered around simply having fun. It’s a holiday that brings out the kid in all of us, whether you’re decorating the house, carving pumpkins, passing out candy, or making something festive in the kitchen.
And speaking of the kitchen, one of my favorite easy fall recipes is roasted sweet potatoes tossed with Wynn’s Kitchen Peanut Sauce.
It’s incredibly simple: I mix our Peanut Sauce with a little coconut aminos, toss it with cubed sweet potatoes, and roast everything until the sweet potatoes are caramelized and tender. The natural sweetness of the potatoes with the creamy, savory peanut sauce is such a good combination.
It’s cozy, flavorful, and exactly the kind of recipe I love—simple ingredients, very little prep, and something you can easily make your own.
Wynn's Kitchen Peanut Sauce Roasted Sweet Potatoes
Ingredients

2 medium sweet potatoes, peeled and cubed

2–3 tablespoons Wynn’s Kitchen Peanut Sauce
-
1 tablespoon coconut aminos
-
Extra Virgin olive oil, as needed
Directions
Preheat your oven to 425°F.
In a large bowl, toss the cubed sweet potatoes with Wynn’s Kitchen Peanut Sauce, coconut aminos, and a small drizzle of oil until evenly coated.
Spread the sweet potatoes onto a baking sheet in a single layer and roast for approximately 25–35 minutes, tossing halfway through, until browned around the edges and tender inside.
Serve them as a side dish, add them to a grain or veggie bowl, or—if you’re anything like me—eat them straight off the sheet pan.
