What Is Vietnamese Fish Sauce?

Fish sauce is one of the foundational ingredients of Vietnamese cooking. Known for its deep savory flavor and natural umami, it can transform everything from soups and stir-fries to marinades, dressings, dipping sauces, and everyday vegetable dishes.

For me, fish sauce isn’t simply another condiment. It is part of the flavor of Vietnamese food I grew up knowing.

That is why when I created Wynn’s Kitchen Fish Sauce, I wanted to honor the traditional way fish sauce has been made for generations—not reinvent it.

Our fish sauce is crafted in Vietnam by a fourth-generation family-owned fish sauce producer using a traditional fermentation method. It is made with only two ingredients: wild anchovies and sea salt, then barrel aged for one year to develop its rich, savory flavor.

What Is Traditional Vietnamese Fish Sauce Made From?

At its simplest, traditional Vietnamese fish sauce needs very little.

Wynn’s Kitchen Fish Sauce contains only:

Wild anchovies
Sea salt

That’s it.

The anchovies are harvested from local fishing boats in Vietnam and fermented in barrels with sea salt, then aged for a full year.

There is something I love about an ingredient that has been made for generations without needing a long ingredient list.

Sometimes the simplest foods have the deepest flavor.

How Is Traditional Vietnamese Fish Sauce Made?

Traditional fish sauce is created through fermentation rather than by simply blending ingredients together.

For Wynn’s Kitchen Fish Sauce, wild anchovies are combined with sea salt and fermented in barrels. The sauce is then allowed to mature for one year.

That time is important.

As the anchovies ferment, they create the concentrated savory flavor that makes fish sauce such an incredibly useful pantry ingredient.

This is also why a small amount can completely change a dish.

What Does Fish Sauce Taste Like?

A splash of fish sauce can make a soup taste richer, vegetables more savory, a marinade more complex, or a dressing more balanced.

How Do You Use Fish Sauce?

You do not have to cook Vietnamese food every night to use it.

Is Fish Sauce Only for Vietnamese Food?

Not at all.

This might be one of the biggest misconceptions about fish sauce.

Fish sauce is deeply rooted in Vietnamese and Southeast Asian cooking, but you can use it almost anywhere you would normally reach for salt or another source of umami.

Try adding a small amount to:

Braised meats

Does Fish Sauce Contain Sugar?

Some prepared fish sauces and fish-sauce-based dipping sauces may contain sugar.

Is Fish Sauce Gluten-Free?

Wynn’s Kitchen Fish Sauce is labeled gluten-free. It is also made without added sugar or MSG.

Does Fish Sauce Contain Shellfish?

Wynn’s Kitchen Fish Sauce is labeled no shellfish, but it does contain fish because it is made from anchovies.

Anyone with a fish allergy should therefore avoid it.

Wynn’s Kitchen Fish Sauce is a product of Kien Giang, Vietnam and is produced by a fourth-generation family-owned fish sauce producer.

That mattered deeply to me.

As a Vietnamese founder, I didn’t want to create a product merely inspired by Vietnamese fish sauce. I wanted to honor the people, process, and culinary tradition behind it.

Fermentation takes time.

Our fish sauce is aged for one full year, allowing the anchovies and sea salt to naturally develop the deep savory character associated with traditional fish sauce.
