Leftover Mashed Potatoes Panckake with saté aioli

Recipe:
- 3 cups cold mashed potatoes
- 2/3 cups shredded cheese
- 2 eggs
- 1/4 cup all purpose flour
- couple shakes of @traderjoes Everything But the bagel seasoning
- ghee for frying
- saté aioli ( mix saté sauce with mayo)
- garnish with sliced scallions
Directions:
1) Mix all the ingredients in a large mixing bowl.
2) Heat ghee in a cast iron skillet on medium heat.
3) Using an ice cream scooper scoop out mixture, mashed lightly and fry in batches - give them space in between.
4) Serve with saté aioli or sour cream for the kids if they can’t eat spicy foods.
