Harvest Veggie Peanut Bowl

Ingredients:

  • 1 small butternut squash, peeled, seeded, and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 cups cooked quinoa or brown rice
  • 2 cups baby spinach or kale, chopped
  • 1 cup shaved Brussels sprouts
  • 1 cup cooked chickpeas
  • 1/4 cup shaved carrots
  • 1/4 cup pomegranate seeds, dried cranberries, or raisins
  • 1/4 cup chopped nuts, pepitas, or hemp seeds
  • Wynn's Kitchen Peanut Sauce, for drizzling

Directions:

  1. Preheat your oven to 400°F (200°C). Toss the diced butternut squash in 1 tablespoon of olive oil, and season with salt and pepper. Spread them out on a baking sheet and roast in the preheated oven for about 20-25 minutes or until they are tender and lightly browned.

  2. While the squash is roasting, prepare your choice of grains (quinoa or brown rice) according to package instructions. In a large bowl, combine the cooked grains, chickpeas, assorted veggies, and your favorite toppings like pomegranate seeds, dried cranberries, raisins, chopped nuts, or pepitas.

  3. Once the butternut squash is done, add it to the bowl with the other ingredients. Drizzle Wynn's Peanut Sauce over the top of the veggie bowl. Toss everything together gently to combine all the flavors and ingredients.
