Vietnamese Shrimp Glass Noodles

When I’m craving noodles but want a light dinner, glass noodles are my favorite dish and it’s packed with tons of veggies.

Ingredients:

-1 package of bean thread noodles (aka glass noodles) or miracle noodles for keto
-2 Tbs extra virgin olive oil
-3 cloves minced garlic
-2 stalks thinly sliced celery
-1 cup shredded carrots
-1lb of shrimp peeled and deveined
1 juiced lime
2 Tbs fish sauce (@sonfishsauce )
1 Tbs sate sauce @wynnskitchen
1 Tbs coconut aminos
¼ cup sliced green onions
Garnish with cilantro

Instructions:

1. Place the noodles in a large bowl , cover with hot water and allow for it to sit for 30 minutes. Drain well, and set aside.

2. In a large pan, heat the oil over medium heat, when the oil is hot, add the garlic, celery, carrots. Add 2 Tablespoons fish sauce and stir- fry for 3 minutes.
3. Add the shrimp and stir-fry for another minute.
4. Add the noodles, juice of 1 lime, coconut aminos, sate sauce, green onions and stir fry for another minute.

Served with fresh ground pepper, cilantro, and additional sate sauce if desired
